Happy Monday! I welcomed the morning with an extremely dry and painful throat from sleeping with my mouth open. Why would I do that you ask? Well, because my nose was stuffed up of course. I am sick, which is not ideal, but rarely do I get sick anymore (knock on wood) since changing around my eating habits and making it a point to regularly exercise.
This weekend we had a bunch of things scheduled which was nice because we haven’t had an adventure filled weekend in awhile. My sister sent me a flyer for the Loudoun Grown expo, which is basically a big gathering of local merchants (farms, breweries, etc) where you can get information, sign up for CSAs, and maybe sneak some free samples (or five). I was really excited to go because of course I LOVE FOOD. Here is my excitement with a giant strawberry:

Hydroponic lettuce! So green!!
I stole some samples of this “green drink” (very original name). It was kale, collard greens, and some kind of citrus. Pretty tasty for sure!
I was most excited to eat lunch from The Randy Radish. They are a plant based food company and I have seen their truck at our local farmer’s market, but they are usually sold out of their delicious breakfast foods by the time we get there!
I got a jackfruit BBQ sandwich. WTF is a jackfruit you say? I have no idea, but it was delicious! I see them all the time in the Asian store, but have no idea what to do with them, so I steer clear. It is a tropical fruit, but when it is unripe, takes on a meat-like consistency. It was an exciting experience!
Saturday night we went the Loudoun Symphony Orchestra’s Valentine’s-inspired concert. Sunday Neil’s parents stopped by and his mom gave me one of her healthy concoctions for me to take for lunch. She usually brings over some kind of lentil and vegetable mixture which is always exciting because she is an awesome cook! Today’s lunch was a little different and consisted of lima beans, green garbanzo beans, corn, and SPICE. mmmm.
Neil and I made our first homemade chicken noodle soup overnight in the crock pot as well, so I may post the recipe for that sometime this week. I haven’t decided if I am going to the gym tonight or not given this sickness. It is really only a head cold and I wasn’t able to go last Thursday because of the snow, so I will probably give it a shot. I hope everyone had a great weekend!
