This week’s What I Ate Wednesday is a compilation of a lot of different days and meals so bear with me. It was all glorious and delicious. If you’re looking for more inspiration for meals, check out Jenn’s linkup for lots of other options!
There was a lot of eating during this long weekend and I know I don’t have pictures of everything, but I’m just going to bombard you with lots of pictures.
Fourth of July there was a three course spread for everyone to pick from. We arrived at the tail end of appetizers, so this is my plate from the main course. BBQ pork, edamame salad, and a fruit kebab. I also went back for a cheeseburger, but promptly ate it. I wasn’t a fan of any of the desserts, so I had another fruit kebab.
My breakfasts were always the same except for Saturday when we busted out the waffle maker and I went to town on gluten and Earth Balance. Hey, at least I made sure to omit one of my food sensitivities by not using butter.
Saturday lunch we went to Which Which, which (ha) was a big hit with Neil’s brother and niece. So much so, in fact, that his brother went back for an Elvis sub of peanut butter, banana, honey, and bacon. This place is awesome!
I got my normal tomato and avocado bowl with pesto, mushrooms, and spinach.
Saturday night’s dinner was at Neil’s parent’s house and involved their normal gigantic spread of food. Neil sauteed these peppers and made them beautiful.
We had Mexican and fish for dinner.
Grilled salmon, spanish rice, taco, and peppers.
Then came too many desserts to count. Note the delicious cupcakes we brought before they were dissected.
Sunday brunch I had scrambled eggs with veggies (very original).
The consensus was to get dessert so we opted for this banana chocolate thingy. I didn’t love it, but I didn’t hate it either. I may have also eaten a leftover cupcake later for dessert. Flourless chocolate is the way to go.
